Hey There, I’m Melanie! I am a former CPA turned personal finance blogger and mom of three. When you ‘Budget With Mel’, you’ll develop monthly budgets, cost-cutting tactics, and learn new behaviors and beliefs about money. It’s time you took the stress and confusion out of your personal finances.
Whether it's back to school finding a routine, busy jobs, or life in general that makes meal planning tough, I want to ease the stress and offer some of my favorite meal planning resources!
I've been at the point where life is so busy and stressful that 3x a week we are picking up take out otherwise it's mac and cheese or top ramen.
It's not fun, the meals are not nutritious, and you feel overwhelmed but don't have time to do anything about it.
To be quite honest, I do not enjoy cooking, nor do I ever feel like my life affords me the time.
So how do I stay motivated to meal plan (most of the time, I am human and sometimes say forget it) every week?
My secret is to make it as easy on myself as possible to meal plan, grocery shop, and prepare a nutritious meal.
Now that I'm a mom, I'm always looking for shortcuts, tools to make me more efficient, and the easiest possible way to get something done RIGHT.
Because you see, it goes beyond meal time.
I want to be efficient in my home so that I have more time for what matters most , my family, without sacrificing nutritious meals, a clean home, etc.
That being said, to help with the overwhelm of meal time, I want to share some of my absolute favorite resources.

Foil pans are amazing. I've officially entered into mom world, because when these arrive it's the highlight of my day!
I use these foil pans to make my freezer meals. No dishes = less cleanup time for mom!
I always order the foil pans pictured above and keep a stack in my pantry so whenever I decide to double a recipe I can quick grab a pan, pour in the ingredients, and freeze!
Using a meal planning dry erase board is an awesome way to get the whole family involved with dinnertime.
If a child/your spouse uses the last of something, have them write it on the grocery list section.
Keep the dinner menu up in site for everyone so that all members of the household know what you're having what night, and that eating out is NOT on the menu.
I'm slightly obsessed with freezer meals. My motto is you can freeze anything. Bread, cheese, yogurt, butter, bananas, sliced fruit. You name it, I freeze it.
I do this because I like to have lots of ingredients on hand so that it's easier for me to shelf cook, meaning I make meals based on what I have on hand.
To keep things organized, a freezer cube works wonders. It also makes it easier to freeze liquids (think soups) because it stays flat when you freeze it.
It's not very big, so it will fit in just about any freezer.
Organization will help you tremendously with meal planning. Using food storage containers makes it easier to take inventory, keep your food organized by type, and it creates more space so you can buy in bulk.
ORGANIZATION is the name of the game, friends. I know, I fought it too. Don't. Succumb to the pressures.
The containers pictured below are available for Amazon Prime and work fantastic!
If your food is disorganized and messy, meal planning and cooking will feel like more of a burden than a blessing!
Keep it organized, you'll be more likely to make meals!
